Smithfield Fresh Pork Loin Filet Cooking Instructions

Fall means it's time to break out your hearty, homey recipes. During the fall months when the air is crisp, there is nothing more comforting that the classic pairing of roast pork with apples. Just the thought of it reminds me of apple picking with the kids, chunky sweaters and hot cocoa.
The autumn months are definitely my favorite months out of the whole year. In the Midwest where winters are cold and long and summers are hot and short, the fall season is, in my opinion, the prettiest time of year. Leaves turn into beautiful shades of gold, orange and reds that cover horizons. And growing up in San Francisco where seasons don't change like they do in the Midwest, I have grown to love it more and more.
My recipe for Apple Juice Box Garlic Herb Pork Loin Filet uses Smithfield® Marinated Garlic Herb Pork Loin Filet that I bought at my local Kroger retailer and I simply sear it before putting it in the oven for about 30 minutes. Adding sweet carrots, onions and garlic adds more robust flavors and delicious vegetables as a side, adding Real Flavor, Real Fast.

Funny story. I named this recipe Apple Juice Box Garlic Herb Pork Loin Filet because I couldn't find the jug of apple juice in the fridge. But I did find an apple juice box, which was just the perfect amount of apple juice needed for this recipe!

Apple Juice Box Garlic Herb Pork Loin Filet
Ingredients:
- 1 Smithfield® Garlic Herb Pork Loin Filet
- 3 tablespoons olive oil
- 3 cloves garlic, rough chopped
- 1/2 red onion, large dice
- 1 cup baby carrots
- 1/2 cup halved cherry tomatoes
- 2 tablespoons roughly chopped parsley
- Salt and fresh cracked pepper to taste
Instructions:
Heat the oven to 350 degrees.
Take an oven safe pan and heat the oil to high heat. Sear the pork loin until it turns golden brown on the outside. This will not cook the pork loin all the way through.
Then, add the onions, garlic and carrots. Add the apple juice box and lightly scrape the bottom of the pan to pick up the brown bits.
Roast in the oven, uncovered for 30 minutes for every pound. See your Smithfield package for instructions on cooking times. I roasted mine for 30 minutes, until 165 degrees, internal temperature. Can you believe it? Now that is real flavor, real fast.
After it's cooked all the way through, toss in the tomatoes and fresh parsley and serve.
